Fino at Fazenda reveals spring / summer cocktail menu

Fino at Fazenda, the recently opened cosmopolitan South American bar in the square mile, has just launched their spring / summer cocktail menu, drawing inspiration from signature drinks from the best bars from across the continent. Translating to ‘refined’, Fino emanates contemporary elegance and finesse, offering a stylish haven in the heart of the City with a menu that highlights the restaurant’s South American heritage.
Offering expertly mixed drinks, Bar Manager Michela Castiglioni has created a 12-strong cocktail menu, based around South American spirits and indigenous ingredients. Serves include the Once In Cartagena – a celebration of the bar Alquímo’s unique way of using indigenous flavours, and mixing avocado-washed La Hechicera rum, Yaguara still-strength, mango, pineapple, and almond soda. Also set to be a favourite is Maestros, a dedication to Tato Giovannoni, who changed the face of bartending in South America, and its most famous establishment, Florería Atlántico. The cocktail combines Príncipe De Los Apostóles gin, suze, sugar snap peas, and Chandon Brut for a bubbly and crisp Argentinian treat.
Others include the Néctar De Los Andes, evoking the delicate elegance of Lima’s Lady Bee in a honey-led clarified punch, and made with La Diablada pisco, sipello, beesou, hibiscus, lychee, passion fruit, yoghurt, and honey, and the Invisible Cue, mixing coconut washed El Jimador tequila, agave syrup, and vanilla bitters as a tribute to Mexican speakeasy Handshake’s mystique and mastery. Alongside the drinks list, guests at Fino can enjoy a selection of dishes sure to transport them to the Pampas. The menu, curated by Executive Chef Francisco Martinez, features a selection of Fazenda’s signature small plates alongside some exclusive South-American sandwiches.
Platos chicos include the decadent Empanadas de Wagyu – with wagyu beef and an egg yolk as well as the Croquetas de Asado – beef rib croquettes with a chimichurri mayo, and Viera – a succulent Scottish scallop with a traditional moqueca sauce, yuzu and smoked ají. Guests can also indulge in the Gamba Patagónica – a juicy, giant king prawn dressed with a spicy chimichurri and Caviar e Churros – the surprising pairing of Cornish Baeri Caviar with savoury churros and crème fraîche.
A premium sandwich offering, all served with crispy fries, includes the Bauru Sanduíche – showing the top-sirloin cut of beef, Picanha, with an egg, peppers and manchego cheese, and the Choripán de Wagyu – a wagyu beef sausage layered with peppers and chimichurri mayo. Fino will also be showcasing South American Aperitivo Fridays, commencing 17th May – between 4pm and 10pm, where guests can enjoy a cocktail from their Signature Cocktail menu or a glass of wine with a small plate for just £18.

In the back end of the expansive bar is a lounge area, framed by a vibrant feature wall and a plush-emerald sofa, where guests can relax and enjoy the bar’s extensive menu. Ambient lighting throughout the bar sets the tone for an experience to be remembered.
